Whoopie Pies

The cookies are also called Gobs in some parts of the country.

COOKIE/CAKE

1 cup milk
2 cups flour
dash salt
1 egg
5 Tbsp. cocoa powder
5 Tbsp. shortening
1 1/2 tsp. baking powder
1 cup sugar

Cream the shortening and sugar until light and fluffy. Add egg, beat well. Add dry sifted ingredients, alternating with milk. Drop by spoonfulls on ungreased cookie sheet. Bake at 425 degrees for 7-10 minutes. Cool.

FILLING

1/2 cup margerine or butter, softened
1/2 cup marshmallow fluff
1 cup sugar
3 Tbsp. flour
2/3 cup milk
1 tsp. vanilla

Beat all together about 5 minutes until creamy.


To assemble. Take one of the cookie/cake parts and spread on a generous amount of filling. Top with another half. You now have a whoopie pie. These freeze great.
